Mousses & Fromages

Proper storage of mousses, mousse cakes & fromages: Covered in refrigerator.

Shelf-life of mousses, mousse cakes & fromages:  2-4 days in the refrigerator if hygiene has been top notch and mousse is without cream. Whit heavy cream 2 days at the most.

Freezing of mousses, mousse cakes & fromages: 3 months in the freezer. (There may need whipping).

Defrosting mousses, mousse cakes & fromages: Not tested. I would let it thaw in the refrigerator and then re-whip lightly before use, if  needed. Is the mousse thinner than desired, add whipped cream for a firmer texture.

How can you tell whether mousses, mousse cakes or fromages are good or bad?
Mold, bad taste, strange texture, too wet, freeze damage. If you doubt, leave it out.
