Lime bars

Lime bars are damn good. Ok, I tasted lemon bars a week ago and I thought, what else can I like in the world of citrus fruits? Let’s se! Lime, I love lime. Not exactly a new invention, but in my opinion it knocks the beloved lemon bar of the first place. The lime bar is better than lemon bars, because the lime has almost a little extra flavor, a bitterness, which makes it very exciting to eat and they look so fresh :). If you generally like tangy desserts and would like to make cake very fast, very cheap and very easy, the lime bars are just the right cake to make.

Yields approx. 18 bars

Lime Bars

For the Crust
  • ½ pound (2 sticks) unsalted butter, at room temperature
  • ½ cup – 100 g granulated sugar
  • 2 cups – 200 g all-purpose flour
  • 1/8 teaspoon kosher salt

Method:
1.
Cream the butter & sugar until fluffy and light.
2.
Combine flour and salt.
3.
Whit you mixer on low add the flour to the butter mixture until just mixed.
4.
Spread the dough evenly in a 13*9*2- inch baking pan and put it in the fridge.
5.
Preheat the oven to 175°C/350°F.
6.
When the oven is hot enough bake the crust for 15-20 min. (light browned)
7.
Let the crust cool down for 20 min. while making the filling.

For the Filling
  • 1 cup – 100 g all-purpose flour
  • 2 1/2 cups – 250 g granulated sugar
  • 2 tablespoons grated organic lime zest (3 large lemons)
  • 6 large eggs, at room temperature
  • 1 cup – 250 ml freshly squeezed organic lime juice

Method:
1. Add the ingredients in the order above and mix it with a blender until just smooth.
2. Pour the filling in the crust and bake it for 25-30 min. until just set.
3. Cool it down before cutting.
