Almond Macaroon Muffins

These Macaroon muffins are one of my go-to cakes. It is always a hit, crazy easy to make, stays juicy and are freezer suitable. It is also one of those recipes that can be accommodated in most sizes of molds, with a bullet-proof result every time. Muffins with macaroon has a crisp crumb, is very moist and there are little soggy blobs of macaroon when you take a bite. It’s also really good with chocolate chunks.

The original recipe I got from my sister when I graduated. I remember that I got a handwritten recipe book with recipes she used the most and a piece of jewelery. Since then there have been many baked macaroon muffins and in all shapes and forms. Therefore, below is a small list of baking times at the various sizes. Those you see in this recipe is made in large muffin molds without chocolate pieces. They are very similar in size to those you get at Baresso, Starbucks and other coffee shops.

Mini cupcake molds:
Bake at 180°C (356°F) convection / 200°C (392°F) regular oven for approx. 12 min.  1 batch gives 70 pieces.
Regular cupcake molds:
Bake at 180°C (356°F) convection / 200°C (392°F) regular oven for approx. 18 min. 1 batch gives 40-50 pieces.
Large muffin molds:
Bake at 180°C (356°F) convection / 200°C (392°F) regular oven for approx. 35-40 min. 1 batch gives 10-12 pieces. (Shown in the recipe).

Ingredients:

  • 6 egg
  • 2 cups granulated sugar
  • 250 g / 1 cup / 0,5 lb / 8 oz all purpose flour
  • 250 g / 2,2 sticks of margarine
  • 1,5 cup / 250 g crushed almond macaroonspossible
  • 100 g / 3,5 oz chocolate, coarsely chopped (I prefer them without chocolate)

Method:
1. Heat the oven to 180°C/356°F convection or 200°C/392°F normal oven.
2. Melt margarine in a small saucepan.
3. Beat the eggs and sugar white and foamy.
4. Fold the flour, almond macaroons and margarine into the beaten eggs.
5. Put the dough into the desired muffin paper and bake them according to the baking times above. A tooth pick should come out clean from the center of the cake, when done.
6. Let the muffins cool down.
