This pear cake with caramel sauce is a really good, I often find that people do not like pear in dessert and cake compared to for example apples, which I find very odd. Pears has a super soft texture and is slightly less sweet than apples and therefore provides a super delicious sweetness and a lovely moist spongy texture to all sort of pastries. The pear cake is super moist and spongy, with delicious soft pieces of pear. This fruit cake is easy to make and you can add other fruits and berries as you like. The cake stays moist and delicious for several days if stored in an airtight container at room temperature. I made a homemade caramel sauce to the pear cake, but it is also super delicious with a little sour cream or vanilla ice cream :-). Enjoy!

Yields an 8,5 ich cake, enough for 8-10 servings.

Caramel sauce

  • 1 cup sugar
  • 2 tablespoons corn syrup
  • 1/4 cup water
  • 1/2 cup cream (hot)
  • 2 tablespoons butter, room temperature
  • Grains of 1/2 vanilla pod

Method:

  1. Heat the sugar, syrup and water in a medium saucepan, stirring constantly.
  2. When it boils you stop stirring and let it cook until it has a nice amber color. Remove immediately from the heat.
  3. Pour a little of the cream at a time with constant whipping.
  4. Stir until the candy is completely smooth. Are there any lumps, then give it gently heat until dissolved.
  5. Stir vaniljekornene in the soft butter into a vanilla butter.
  6. Stir vanilla butter caramel little at a time until completely smooth.
  7. Use immediately or store in refrigerator until needed. Take the caramel before use so that the texture is not too tight.

Pear cake

Filling

  • 1 cup – 250 ml pear/apple juice
  • 4 tbsp cornflour
  • 1 tbsp sugar
  • 1 tsp vanilla essence
  • 4 pears, peeled, thinly sliced

Crumble

  • 50 g – 1/2 cup – 2 oz flour
  • 45 g – 1/5 cup honey
  • 1 pinch of salt
  • 60 g – 1/4 cup – 1/2 stick – 2 oz reduced-fat spread, softened

Base

  • 100 g – 3,5 oz reduced-fat spread, softened
  • 1/3 cup – 135 g granulated sugar
  • 1 egg
  • 1 cup self-raising flour
  • 100 ml trim milk

Method:

  1. Peel and slice your pears into thin wedges.
  2. Preheat oven to 180°C/356°F and cover a 20 cm/8,5 inch spring form with baking paper.
  3. Make the filling by mixing 1/3 of the juice with corn starch and mix well. Set it aside.
  4. In a saucepan, mix the remaining juice, sugar and vanilla and bring it to a boil.
  5. Lower the heat and add the corn starch.
  6. Stir constantly until it thickens. Take it off the heat. Turn the pear wedges in the mixture. Let it rest.
  7. Make the crumble.
  8. Blend flour and butter to coarse crumbs. Add honey a little at a time, until moist crumbs form. Set the crumble in the refrigerator while you make the base.
  9. Combine butter and sugar in a medium bowl and whip it until it is light and airy. Add the egg and beat until combined.
  10. Fold the flour in the dough and then add the milk. Stir gently until just mixed.
  11. Pour the batter into the prepared springform pan in an evenly layer with a spatula.
  12. Spread pear filling over the dough and press it gently, so they are evenly distributed.
  13. Spread the crumble out over the cake and bake for 1 hour and 10 minutes until a knife comes out clean from the center.
  14. Remove it from the oven and set it to cool on a wire rack. (at room temperature)
  15. To serve, pour a generously amount of caramel sauce on the cake. I normally put some extra caramel sauce on the table for the caramel lovers.
